Restaurateur opening urban brewery

A new brewery is set to open in Grand Rapids.

East West Brewing Co. said it will open soon in Grand Rapids’ Eastown neighborhood, at 1400 Lake Dr. SE, in a 2,000-square-foot space next to Bombay Cuisine.

East West Brewing’s plans suggest it will open by the end of the year.

The brewery is owned by Balwinder Bal, whose family has owned and operated Bombay Cuisine for more than 17 years.

Bal said he’s planned on opening a brewery for nearly 10 years, since he brewed his first beer at Saugatuck Brewing Co.

“We listened to the community, and they shared their ides with us,” Bal said, who will serve as head brewer and chef. “East West Brewing Company is a place where everyone will feel welcome to stop by for a beer or a bite to eat, while engaging in friendly conversation.”

The brewpub will expect to keep 10 beers on tap, using locally sourced ingredients, while also offering guest taps from local breweries.

East West Brewing plans to brew several types of beers: a session IPA, brown ale, amber ale, continental ale, wheat ale, amber lager and “spiced variants.”

Bal worked with Ann Arbor-based brewer Teo Watson-Ahlbrandt to finalize the beer recipes.

“I feel the most exciting aspect of working on East West has been working with Bal on incorporating his expertise in culinary spices to craft beer brewing,” Watson-Ahlbrandt  said. “There are so many similarities in the ways that a chef and a brewer utilize their processes to create flavor.”
