Restaurateur plans Asian-Latin taqueria
A Grand Rapids neighborhood may have a new tenant soon in the form of a taqueria.
Gregory Craig is looking to open Georgina’s taqueria in the former Phil’s Stuff location, at 724 Wealthy St. SE.
Craig operates a similar restaurant in Traverse City, which he opened four years ago.
Craig is seeking approval for the restaurant from the City of Grand Rapids Planning Commission on Thursday.
The restaurant would have seating for up to 60 customers.
Georgina’s plans to serve alcohol and feature a 24-seat outdoor patio, to be located behind the building, according to the application filed with the city.
It is also looking to add four on-site parking spaces.
While Craig said his food is hard to categorize, the easiest way to explain it is Asian and Latin fusion fare. He also said it’s similar to Nicaraguan street food, but slightly more refined.
He said he uses cooking techniques from several cultures: French, Italian, Latin, Cuban and Asian to create his menu items.
Craig said he developed his cooking style based on his background. He was born in Nicaragua to a mother who is half Chinese and a Cuban-born father. Combining these different cultural elements, he has come up with his eclectic style.
