Couple opens gastropub

A casual gastropub serving American- and Southern-style food has opened in the region.
Co-owners and couple Josh Sandberg and Katie Sandberg — former executive chef and house manager, respectively, at The Hearthstone Bistro in Muskegon — held a grand opening this week for The Paisley Pig in Grand Haven, at 501 Miller Dr.
Food menu
The main menu features smoked wings, ribs, soups, sandwiches, salads, burgers, shrimp and grits, duck and waffles, as well as an array of artisan and build-your-own pizzas that can be made gluten-free.
Many of the items on the main menu are available for takeout.
The restaurant serves desserts, such as salted caramel chocolate tarts, lemon-berry stack cake, tiramisu and s’more dip.
The children’s menu features chicken tenders, hot dogs, grilled cheese, pizza, macaroni and cheese and a “kiddy burger.”
Beverages
The Paisley Pig offers Coca-Cola products, Northwood Sodas, kombucha tea, Ferris and French press coffee and an assortment of teas.
The owners are waiting on a liquor license that will allow them to serve beer and wine.
Ambience
The Business Journal reported in April that the restaurant, which is about two miles from the beach, was designed to have a relaxed atmosphere that will allow customers to feel comfortable coming straight from the sand and waves.
“We don’t want it to feel stuffy like you’re not welcome to come in wearing shorts and tank,” Katie Sandberg said in April.
The Sandbergs purchased and renovated the 3,700-square-foot former Sam’s Tacos space and converted it into a “rustic farmhouse-style,” with reclaimed wood, pig décor and an open-concept kitchen.
