Restaurant company opening taqueria in suburb
A new taqueria is coming to the area.
Grand Rapids-based Meritage Hospitality Group said today that it is opening Stan Diego Baja Taco Kitchen on April 26 in Walker, at 355 Wilson Ave. NW.
The Baja California-inspired menu will feature the tacos, along with tamales, tlyudas, flautas, queso fundido and churros.
“Tortillas are the base for any amazing taco, which is why we make ours from scratch every day,” said Luke Theaker, executive chef, Stan Diego. “We’ve set out to challenge the perception that Mexican cuisine has to be heavy. In true California fashion, our menu is bright, light and fresh.”
Meritage Hospitality Group announced plans for the taco-bar concept at the space last November. The venue was previously home to the Crooked Goose.
The 130-seat restaurant will also have a 15-seat bar with a wide selection of beer, tequila, whiskey and mezcal, along with margaritas and cocktails.
“We put a lot of thought into the authenticity of our beverage program,” said Brandon Wilcox general manager, Stan Diego. “We’ll have a list of bottled beverages made in Mexico from real cane sugar. ... We’ve also got our own house-made limeade and horchata agua frescas.”
The venue will also feature three 50-inch TVs, table games, a 1973 dine-in Volkswagen bus and a 14-inch garage door to maximize light.
Stan Diego will have shortened business hours for opening weekend. The restaurant will be open April 26-28 from 4-11 p.m. and on April 29 from 4-10 p.m.
Regular business hours will be Sunday to Wednesday 11 a.m. to 10 p.m. and Thursday to Saturday 11 a.m. to 11 p.m.
